Asparagus Supreme 2 Tbsp. shortening 2 Tbsp. flour 1 cup hot milk 1/2 cup cheese, grated 2 Tbsp. onion, chopped 2 eggs, separated 2 cups asparagus, cooked 1/2 tsp. salt 1/8 tsp. pepper Melt shortening in a double boiler. Add flour and mix until smooth. Add milk and stir until thick. Add grated cheese and onion, and stir until cheese is melted. Add small amount of hot mixture to beaten egg yolks, while stirring, then add eggs to hot mixture. Add asparagus, salt and pepper. Fold in stiffly beaten egg whites. Pour into greased casserole and bake at 300 degrees for 30 minutes. Serves 6. |
