Cauliflower Bake 1 large cauliflower, cut into flowerets 1/2 tsp. salt 3 cups water 1/4 cup margarine, melted 1 Tbsp. sugar 1/2 tsp. salt 1/2 tsp. pepper 1 cup round buttery cracker crumbs 1 1/2 cup shredded Cheddar cheese 1 medium onion, chopped 1/2 cup chopped green pepper 1 (16 oz.) can whole tomatoes, undrained and chopped Combine cauliflower, salt and water in a large saucepan. Bring to a boil, cover and reduce heat. Cook 5 minutes until tender. Drain and set aside. In a large bowl, combine butter, salt, pepper, and cracker crumbs. Stir in cauliflower, 1 cup cheese, onion, green pepper and tomatoes. Spoon mixture into lightly greased 9 x 13 x 2 inch baking dish. Bake at 350 degrees for 35 minutes. Sprinkle with remaining 1/2 cup cheese and bake 5
minutes longer. Makes 6 servings. |
