Chicken and Ham Jambalaya 2 cups cooked rice 3/4 cup pitted ripe olives 2 cups diced cooked ham 2 cups diced cooked chicken 2 medium onions, chopped 1 large green pepper, diced 1 cup diced celery 1 large can tomatoes 1/4 cup butter Crushed potato chips Mix rice, meat and olives. Saute onion and green pepper in butter, and add tomatoes. Simmer 5 minutes and pour over meat and rice. Season to taste. Top with crushed potato chips. Bake in a 9 x 13 inch pan at 350 degrees for 30 to 40 minutes. Serves 10. |
