Enchilada Casserole 1 1/2 lbs. ground beef 1 cup chopped onion 1 1/2 tsp. cumin 2 cloves crushed garlic 4 tsp. chili powder 1 1/2 tsp. salt 1/2 tsp. pepper 1 cup water 2 cups taco sauce 12 corn tortillas 1 lb. Monterey Jack cheese, grated 1 cup sour cream Crease a 9 x 13 inch pan. Cook hamburger and onion. Drain. Add cumin, garlic, chili powder, salt, pepper, and water and simmer uncovered for 10 minutes. Pour half of taco sauce in pan. Put half of the tortillas on top. Add other half of taco sauce and spoon in hamburger mixture. Top with sour cream and sprinkle on half of the cheese. Layer in remaining tortillas and then the last of the cheese. Cover and bake at 375 degrees for 40 minutes. Remove cover and bake for 5 more minutes |
