Ah, the casserole. They're great for
potlucks, parties, luncheons, family dinners and for using up
leftovers. Many casseroles can be made and frozen ahead (unless
they contain potatoes, which don't freeze well in homemade
dishes). If you do freeze your dish, make sure it's in something
that will go to from freezer to oven, or pull out in the morning and put
in the fridge to thaw. Then pop in the oven for dinner. For
singles or smaller families, you can generally divide the recipes into
smaller containers and have more than one meal ready in your freezer.
