Turkey Souffle 6 slices white bread 2 cups cooked turkey or chicken, diced 1/2 cup finely chopped green pepper 1/2 cup finely chopped celery 1/2 cup mayonnaise 1/4 tsp. salt Dash of pepper 2 beaten eggs 1 1/2 cup milk 1 cup condensed cream of mushroom soup 1/2 cup shredded sharp cheese Cube 2 slices and the crusts of other slices of bread. Place in bottom of a 9 x 9 inch greased pan. Combine turkey, vegetables, mayonnaise and seasonings. Spoon over bread cubes. Arrange remaining bread slices atop turkey mixture. Combine eggs and milk, and pour over all. Cover and chill 1 hour, or overnight. Spoon soup over top. Bake at 350 degrees about 1 hour, or until set. Sprinkle cheese over top the last few
minutes of baking. Makes 6 servings. |
