Wild Rice and Seafood Casserole 3 Tbsp. melted butter 1 cup diced celery 1 small onion, diced 3 Tbsp. green pepper, chopped Pimento pieces (optional 1 small can mushrooms 2 cups cooked white rice 2 cups cooked wild rice 1/2 lb. crab 2/4 lb. shrimp 1 cup undiluted mushroom soup Saute celery, onion, green pepper, pimento, and mushrooms in butter. Transfer vegetable mixture to a 2 quart casserole dish. Add remaining ingredients, blending together. Bake at 350 degrees for 45 minutes. Makes 6 to 8 servings. |
