Yum Yum Casserole 1 (6 oz.) pkg. long grain rice, cooked 1 lb. broccoli, steamed 3 cups cooked chicken, ham or hamburger 2 cups shredded cheese 1 cup mayonnaise 1 can cream of celery soup 1/4 tsp. dry mustard 1/4 tsp. curry powder 1 can crushed croutons 1 Tbsp. margarine 1/4 cup grated Parmesan cheese Coat a 9 x 13 inch pan with non-stick spray. Layer in rice, broccoli, meat and cheese into pan. Combine soup, mayonnaise, mustard and curry powder. Pour over layers. Combine crushed croutons and margarine. Top the layers. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30 minutes. For a moister casserole, add some milk to
the canned soup. |
