Zucchini Casserole 2 1/2 lbs. zucchini, cut in 3/8 inch slices 1/2 cup chopped green onions 1/2 cup chopped onion 4 Tbsp. margarine 1 (3 oz.) can sliced mushrooms, drained 1 pkg. spaghetti sauce dry mix 1 cup water 1 (6 oz.) can tomato paste 1 (4 oz.) pkg. shredded Mozzarella cheese 2 Tbsp. Parmesan cheese Cook zucchini in covered saucepan, 4 to 5 minutes. Drain. Saute onion and green pepper in margarine. Remove from heat, stir in mushrooms, spaghetti sauce mix, water and tomato paste. Gently stir in zucchini and Mozzarella cheese. Place in 2 quart shallow casserole dish. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30 to 35
minutes. |
