Zucchini Beef Casserole 3/4 lb. ground beef 1 clove garlic, crushed 1 small onion, chopped 1 large or 2 small zucchini 1 (16 oz.) can tomatoes, chopped 1/2 cup raw rice 1/4 cup soy sauce 1 1/2 tsp. basil, crumbled 1/4 cup water 1 cup bread crumbs 1 Tbsp. Parmesan cheese Brown and drain beef with the garlic. Cut zucchini into 1/4 inch slices and add to beef with onions, tomatoes, rice, soy sauce, basil and water. Place in casserole dish and bake at 350 degrees for 30 minutes. Top with bread crumbs and Parmesan cheese. Bake
another 15 minutes. |
