Zucchini Cheese Pie 4 cups thinly sliced zucchini 1 cup chopped onion 1/4 cup margarine 1/2 cup chopped parsley 1/2 tsp. salt 1/2 tsp. pepper 1 tsp. garlic powder 1/4 tsp. basil 1/4 tsp. oregano 2 eggs, beaten 2 cups shredded Mozzarella cheese 1 (8 oz.) can crescent dinner rolls 2 tsp. mustard Saute zucchini and onion and margarine until done, about 10 minutes. Stir in parsley and seasonings. Combine eggs and cheese. Stir in zucchini mixture. In a 9 x 13 inch baking dish, separate dough into two long rectangles. Press over bottom and 1 inch up sides to form crust. Spread crust with mustard. Pour vegetable mixture over crust. Bake in 375 degree oven for 18 to 20 minutes. Let stand 10 minutes before serving. |
