Banana Butterscotch Cookies 3/4 cup butter, softened 1 cup packed brown sugar 1 egg 1/ 14 cup sifted white or whole wheat pastry flour 3/4 tsp. salt 1/2 tsp. soda 1/2 tsp. nutmeg 1 cup mashed banana 1 1/2 cup old-fashioned oats 1/2 cup chopped pecans 1 cup butterscotch ships 1 cup raisins Cream butter and sugar together until light and fluffy. Add egg and blend. Sift together flour, salt, soda and nutmeg. Add to creamed mixture alternately with mashed banana. Stir in oats, pecans, butterscotch chips and raisins. Drop by rounded teaspoonfuls onto lightly greased cookie sheet. Bake in preheated 350 degree oven for 10 minutes. Cool on wire rack. Makes 4 1/2 dozen. |
