Chocolate Griddle Cookies 1/2 cup butter or margarine 3/4 cup granulated sugar 2 eggs, well beaten 1/4 cup brewed cold coffee 1 tsp. vanilla 1 cup flour 1/2 cup cocoa 1/2 cup nuts or flaked coconut (optional) 4 dozen chocolate wafers or stars Preheat electric griddle to 300 degrees. In a mixing bowl, cream butter and sugar. Add eggs. Add coffee and vanilla and mix well. Add flour and cocoa and stir until all ingredients are well blended. Add nuts or coconut, if desired. Drop the batter by teaspoonfuls onto the hot griddle. Bake for 4 minutes. Turn and garnish with chocolate wafers. Bake an additional 4 minutes. Spread melted wafer for frosting. Cool on racks. |
