Lemon-Coconut Squares 1 1/2 cup sifted flour 1/2 cup butter or margarine 1/2 cup brown sugar Filling: 2 eggs, beaten 1 cup brown sugar, firmly packed 1 cup chopped nuts 1 1/2 cup flaked or shredded coconut 2 Tbsp. flour 1/2 tsp. baking powder 1/4 tsp. salt 1/2 tsp. vanilla Frosting: 1 cup confectioners sugar 1 Tbsp. melted butter or margarine Juice of 1 lemon Mix together flour, sugar and butter. Pat down well in buttered 9 x 13 inch pan. Bake in very slow oven (275 degrees) 10 minutes. Filling: Combine eggs, sugar, coconut, nuts, flour, baking powder, salt and vanilla. Spread on top of baked mixture. Bake 20 minutes in moderate oven (350 degrees). While warm, spread with frosting: combine confectioners sugar, melted butter and lemon
juice. Cut in squares. Makes about 24 (2 inch) squares. |
