Lemon Sugar Cookies 1/2 cup shortening 1/2 tsp. salt 2 1/2 tsp. grated lemon rind 1/2 tsp. nutmeg 1 cup sugar 2 eggs 2 cups all purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1 Tbsp. lemon juice Sugar for sprinkling Combine shortening, salt, lemon rind, nutmeg, sugar and eggs. Sift together flour, baking powder and baking soda. Add to wet ingredients and blend well. Blend in lemon juice. Measure out level tablespoonfuls onto greased cookie sheets. Flatten cookies by stamping with a flat-bottomed glass, covered with a damp cloth. Sprinkle with sugar. You may also decorate with raisins, walnuts or colored sugar. Bake at 375 degrees for 10 to 12 minutes. Makes 3 dozen. |
