Low Calorie Molasses Cookies

1/2 cup vegetable oil
1/4 cup molasses
1/2 cup sugar, plus 2 Tbsp. sugar, divided
1 egg
2 cups flour
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves

Beat together oil, molasses, 1/4 cup sugar and egg. Combine flour, soda and spice. Add to molasses mixture and mix well. Cover and refrigerate at least 2 hours. 

Shape into 1 inch balls and roll in 2 Tbsp. sugar. Place on ungreased cookie sheets. Bake at 375 degrees for 10 to 12 minutes, until set and tops crack. Makes 5 dozen.
