Rum Balls 1 (6 oz.) pkg. chocolate chips 3 Tbsp. light corn syrup 1/4 cup rum 1/2 cup sugar 1 1/4 cup crushed vanilla wafers (about 36) 1 cup finely chopped nuts Sugar for coating Melt chocolate chips in double boiler over simmering water. Remove from heat. Blend in corn syrup and rum. Stir in sugar, vanilla wafers and nuts until well combined. Roll mixture, 1 rounded teaspoon at a time, into balls between the palms of hands. Roll balls in sugar and coat generously. Store in airtight container. |
