Sweetheart Filled Cookies 1 cup shortening 2 cups brown sugar 3 eggs 4 1/2 cups flour 1 tsp. cinnamon 1/2 tsp. soda 1/2 tsp. salt Cream shortening and sugar. Add eggs one at a time, beating well after each addition. Sift dry ingredients and blend well. Chill, then roll out 3/4 inch thick. Spread with filling and roll like a jelly roll. Chill and slice with a sharp knife. Bake on a greased cookie sheet 10 to 15 minutes at 375 degrees. Filling 1 cup chopped dates 1/4 cup sugar 1/2 cup water 1 cup chopped nuts Cook to a thick paste and chill before putting on the dough. |
