Aspic Shrimp Salad
1 pkg. lemon Jell-O
3/4 cup hot water
1 cup tomato juice
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. each celery salt, garlic salt, savory salt, onion salt
3 Tbsp. vinegar
1 can cleaned shrimp
1/4 cup diced celery
3 green onions, diced
1/4 cup sliced, stuffed green olives
Dissolve Jell-O in hot water. Add tomato juice, seasonings, and vinegar. As mixture
begins to set, add shrimp, celery, onions and olives. Makes 6 servings.
Seafood Salad
2 envelopes lemon Jell-O
1 tsp. salt
2 cups hot water
2 tsp. vinegar
1 cup flaked tuna
2 Tbsp. chopped celery
2 Tbsp. chopped green pepper
2 tsp. chopped onion
Dissolve Jell-O and salt in hot water. Add vinegar; chill until slightly thickened. Add
tuna, celery, green pepper and onion. Pour into molds. Chill until firm. Unmold and
garnish with crisp salad greens.
Crab meat or shrimp may be used instead of tuna. Makes 6 servings.
