Beet Salad
1 pkg. lemon Jell-O
1 cup water
3/4 cup beet juice
3 Tbsp. vinegar
2 Tbsp. grated onion
1 Tbsp. horseradish
1/2 tsp. salt
1 cup cooked diced beets
1/4 cup diced celery
Combine Jell-O and water. Follow directions on package for temperature of water. Cool.
Add beet juice, vinegar, onion, horseradish and salt. Chill until partially set. Add
vegetables. Chill until firm. Serve on crisp lettuce with mayonnaise.
Special Cabbage Salad
2 pkgs. lime Jell-O
1 cup boiling water
1 cup small marshmallows
1 small can evaporated milk
1 cup chopped nuts
3/4 cup salad dressing (like Miracle Whip)
1 cup cabbage, shredded
1 cup crushed pineapple
Dissolve Jell-O and marshmallows in hot water. When slightly cool, add cabbage, nuts,
salad dressing and pineapple. When it starts to set up, whip the canned milk and fold it in
the Jell-O mixture.
To whip the canned milk, put in a bowl with the beaters and put it in freezer until
partially frozen.
