Pineapple Cheese Cake
1 cup sugar
8 oz. cream cheese
1 pkg. lemon Jell-O
1 cup boiling water
1 cup crushed pineapple
1 can evaporated milk OR 1 pkg. Dream Whip
1 tsp. vanilla
1/4 lb. butter
44 graham crackers
Dissolve Jell-O in water and chill. Crush graham crackers and mix with butter. Line
bottom of large pan with cracker mix, saving some to sprinkle on top. Cream cheese with
sugar. Whip chilled milk, or Dream Whip. Add pineapple, cheese mixture and vanilla to
Jell-O. Pour over cracker crumbs and sprinkle remaining crumbs on top. Chill until firm.
Cut in squares to serve.
Pineapple-Cheese Jell-O
1 pkg. lemon Jell-O
1 pkg. fruit Jell-O
1 (8 oz.) pkg. cream cheese
1 (4 oz.) can crushed pineapple
1 cup cream, whipped
Dissolve lemon Jell-O according to package directions. Pour into loaf pan and let set.
Mix cream cheese, pineapple and whipped cream and spread over set Jell-O. Dissolve
fruit Jell-O according to package directions and when it starts to thicken, pour over
cheese mix. Chill. Unmold and slice to serve.
