Jellied Chicken Salad
1 pkg. lemon or lime Jell-O
1/4 cup cold water
1 cup boiling broth or hot water
1 tsp. onion juice
1 Tbsp. lemon juice or vinegar
Salt and pepper to taste
1/2 cup chopped apples
2 Tbsp. chopped pimentos
3/4 cup finely chopped celery
1 1/2 cups diced cooked chicken
Soak Jell-O in cold water for a few minutes. Add hot chicken broth, onion juice, lemon
juice, salt and pepper. Stir until Jell-O is dissolved. Chill in mold until thick enough to
hold solid food in place. Stir in apples, pimentos, celery and chicken. Chill. Cut in
individual portions and serve on crisp lettuce leaves. Any desired meat or fish may
be substituted for chicken. Makes 8 servings.
Jellied Salmon Salad
1 (3 oz.) pkg. lemon Jell-O
1 cup boiling water
1 cup cold water
2 Tbsp. vinegar
1 (7 1/2 oz.) cans salmon
1/2 cup chopped celery
2 Tbsp. chopped green pepper
2 Tbsp. chopped pimento
1 Tbsp. grated onion
Dissolve Jell-O in boiling water. Stir in cold water and vinegar; chill until slightly
thickened. Fold in remaining ingredients. Pour into individual molds and chill until firm.
Serve on salad greens. Serves 8.
