Corned Beef Salad
1 (3 oz.) pkg. lemon Jell-O, dissolved in 1 cup boiling water
Add:
1/2 cup cold water
Let set until slightly congealed. Whip Jell-O.
Add:
1 (8 oz.) pkg. cream cheese, softened
1 cup mayonnaise
Whip all this together until light and fluffy.
Add:
1 can corned beef, chopped
2 cups chopped celery
2 Tbsp. chopped onions
3 hard boiled eggs, chopped
Put in a 9x13-inch dish. If you choose to dress this up a bit, frost with sour cream and top
with chopped chives.
Green and Gold Mold
1 box lime Jell-O
1 cup grated carrots
1 cup grated Velveeta cheese
Mix Jell-O with 1 cup boiling water. Add 1 cup cold water. Chill until thickened. Add
carrots and cheese. Pour into a ring mold. Chill until firm. Unmold and fill center with
sour cream or dressing. Makes 8 servings.
