Favorite Salad
1 pkg. lime Jell-O
1 pkg. lemon Jell-O
2 cups hot water
1 tall can evaporated milk
1 lb. small curd cottage cheese
1/2 to 1 cup chopped walnuts
1 cup mayonnaise
2 Tbsp. horseradish
No instructions given for preparation, only a note that this salad is 'delicious to serve
with any fish dinner.'
Festive Salad
1 (14 oz.) can fruit cocktail, drained and syrup reserved
1 (3 oz.) pkg. lime Jell-O
1 (3 oz.) pkg. cream cheese, softened
1 cup chilled whipping cream, whipped
Heat 1 1/3 cup syrup very hot. Pour over lime Jell-O. Stir until dissolved. Cool. Chill
until mixture is slightly thick. Lightly oil 1 1/2 quart mold with salad or cooking oil. Set
aside to drain. Gradually add slightly thickened Jell-O to the cream cheese, a small
amount at a time, stirring until well blended after each addition. Mix in fruit, then fold in
whipped cream. Turn into the mold and chill until firm, about 3 hours. Unmold onto a
chilled serving plate. Makes 8 to 10 servings.
