Heavenly Halo
1 (3 oz.) pkg. lime Jell-O
1 cup boiling water
3/4 cup pineapple juice
1/2 cup dry milk
1/2 cup ice water
2 Tbsp. lemon juice
1 cup drained pineapple
Dissolve Jell-O in boiling water. Add pineapple juice and cool until slightly thickened.
Chill beaters and small mixing bowl. Whip dry milk and ice water until soft peaks form,
about 3 to 4 minutes; add lemon juice and continue beating until stiff. Fold whipped milk
and pineapple into Jell-O mixture. Spoon into mold and chill until set. Serve on lettuce
leaf, garnished with parsley and pimento. Makes 6 to 8 servings.
Lime-Cottage Cheese Mold
Combine 2 packages of lime Jell-O with 1 1/2 cups hot water. Pour a small amount of this
clear green Jell-O into your mold, using enough to make a thin layer. To remainder of
Jell-O mixture add 2 tablespoons lemon juice, salt, 2 cups cottage cheese, 1 cup
mayonnaise, and 1 large cucumber, peeled and diced. When clear Jell-O layer is well set,
cover with the remaining mixture and chill.
This recipe may be varied by substituting drained crushed pineapple and diced celery for
the cucumber, or for a second variation, diced canned pears combined with a little
candied ginger.
