Italian Salad
1 pkg. vegetable Jell-O
1 cup boiling water
2 tsp. vinegar
7 to 10 ice cubes
3/4 cup thin tomato wedges
1/2 cup diced cucumbers
1/2 cup sliced radishes
Salt (optional)
Dissolve Jell-O in boiling water. Add vinegar and ice cubes. Stir constantly until thick,
about 3 minutes. Remove any unmelted ice. Fold in tomato wedges, cucumbers,
radishes and salt. Mold and chill. Serve on lettuce leaf. Makes 4 to 6 servings.
Molded Cauliflower Mexican
1 small cauliflower
2 pimentos, chopped
1 Tbsp. grated onion
2 Tbsp. green pepper, chopped
1/2 tsp. salt
1/4 cup vinegar
1 (6 oz.) pkg. lemon Jell-O
1 1/2 cups boiling water
Break cauliflower into small flowerets and steam until tender. Combine cauliflower,
pimento, onion and green pepper. Add salt and vinegar. Marinate for 15 minutes.
Dissolve Jell-O in boiling water. Chill until slightly thickened. Fold vegetables into Jell-O and pour into mold. Chill until firm. Makes 8 servings.
