Jell-O 7-Up Salad
1 large pkg. lemon Jell-O
2 cups hot water
2 cups 7-Up
20 oz. can crushed pineapple, drained and juice saved
1 bananas, sliced
1 cup small marshmallows
Dissolve lemon Jell-O in hot water. Add 7-Up and cool until syrupy. Add pineapple,
bananas, and marshmallows. Put in 13x9x2-inch pan and chill.
Topping:
1/2 cup sugar
2 Tbsp. flour
1 cup pineapple juice
1 egg, beaten
2 Tbsp. butter
1 cup whipped topping
Chopped nuts
Grated cheese
In saucepan, cook over medium heat until thick the sugar, flour, pineapple juice and egg.
Add butter and cool. Then add whipped topping. Blend well, spread on cold Jell-O.
Sprinkle with nuts or grated cheese or both. Slice and serve on bed of shredded lettuce.
