Lemon Cake
1 pkg. lemon cake mix
3/4 cup oil
3/4 cup water
l pkg. lemon Jell-O
4 eggs
Mix and beat all above ingredients. Bake in ungreased 9x13-inch pan at 350
degrees for 35 to 40 minutes.
Glaze: Blend 2 cups sifted powdered sugar, 2 tablespoons soft or melted butter
and juice of 2 or 3 lemons. Poke holes in warm cake with fork and pour glaze over top.
One may use bottled lemon juice of you don't have lemons, about 2 tablespoons of
juice would equal 1 lemon.
Lemon Sheet Cake
1 pkg. lemon fluff cake mix
1 (3 oz.) pkg. lemon Jell-O
3/4 cup oil
3/4 cup water
4 eggs
2 lemons, grated rind and juice
1 3/4 cups powdered sugar
Mix all together except lemon and powdered sugar. Bake in 9x13x2-inch pan 35 to
40 minutes at 325 to 350 degrees. Test with a toothpick. When hot, spread with
butter to moisten. Sprinkle evenly with powdered sugar. Drizzle on the lemon juice and
rind.
