Lime and Grapefruit Salad
1 (No. 2) can grapefruit sections
1 pkg. lime Jell-O
2 Tbsp. lemon juice
1/4 tsp. salt
1 cup cold evaporated milk
1/2 cup broken pecans
1/2 cup sliced celery
Drain syrup from grapefruit and reserve; add water to make 1 1/4 cups. Heat syrup; add
Jell-O and stir until dissolved. Add lemon juice and salt. Chill until partially set. Stir in
milk, pecans, celery and grapefruit. Pour into 5 cup mold. Chill until firm. Unmold to
serve. Makes 8 servings.
Manhattan Salad
1 pkg. lemon Jell-O
2 cups warm water
1 tsp. vinegar
1/2 tsp. salt
1 cup tart apples, diced
1/2 cup celery, diced
Dissolve Jell-O in warm water. Add vinegar and salt. Pour thin layer in mold. Chill until
firm. Combine apples and celery and place in mold. Add remaining Jell-O. Chill until
firm. Unmold onto crisp lettuce. Makes 8 servings.
