Pineapple Dessert
1 pkg. lemon Jell-O
1 1/2 cup warm water
1/2 cup sugar
1 cup crushed pineapple
1/2 cup nuts, chopped
1 pint whipped cream
1 1/2 cup miniature marshmallows
Graham crackers
Dissolve Jell-O in water and add sugar. Let stand until almost set. Add remaining
ingredients, including whipped cream. Pour into square pan, lined with whole graham
crackers. Cover top with graham cracker crumbs. Place in refrigerator. Cut in squares to
serve and top with whipped cream. Serves 12.
Pineapple Torte
1 2/3 cups crushed pineapple
1 pkg. lemon Jell-O
1/2 cup sugar
1 cup evaporated milk, chilled
1 Tbsp. lemon juice
1 cup graham cracker crumbs
2 Tbsp. melted butter
Bring pineapple to a boil and remove from heat. Stir in the Jell-O and sugar, and stir
until dissolved. Chill until partly let. Pour chilled milk into chilled bowl and beat until
stiff peaks form. Add lemon juice and beat until very stiff. Fold in Jell-O mixture. Mix
crumbs and butter thoroughly and put half in bottom of 8x8x2-inch pan. Pour in Jell-O
mix and top with other half of crumbs.
