Party Salad
Salad oil
1 (12 oz.) pkg. frozen sliced peaches
1 pkg. orange Jell-O
1 cup ginger ale
1/4 cup lemon juice
1/2 cup maraschino cherries, chopped
1/4 cup walnuts, chopped
Lightly oil a 3 cup ring mold with salad oil; set aside to drain. Thaw peaches; drain,
reserving syrup in a 1 cup measuring cup. Heat 3/4 cup reserved syrup, adding water if
necessary. Add to Jell-O; stir until completely dissolved. Stir in ginger ale and lemon
juice. Chill until mixture is consistency of thick unbeaten egg whites. Blend in
maraschino cherries, peaches and nuts. Turn into mold; chill until firm. Unmold onto
chilled platter and garnish with watercress. Serve with a dressing made of 1 part
mayonnaise and 1 part whipped cream. Serves 6.
Pink Salad
1 pkg. orange Jell-O
1 cup hot water
1/2 pint whipping cream
1 (3 oz.) pkg. cream cheese
1 green pepper, cut fine
1 small can crushed pineapple
1 small car maraschino cherries, cut fine
Mix Jell-O with hot water and allow to congeal slightly. Whip cream and add cream
cheese, then mix with Jell-O. Add green pepper, cherries and pineapple, including juice.
In addition to the hot water, the cherry juice may be added to Jell-O. Place in mold to set.
