Rhubarb Jell-O Cobbler
3 cups diced rhubarb
1 cup sugar
1 pkg. strawberry Jell-O
1 small pkg. cake mix (like Jiffy)
Butter
Sprinkle rhubarb in flat baking dish. Mix sugar, Jell-O, and cake mix, and sprinkle over
rhubarb. Pour over this 1 cup water. Bake at 350 degrees for 25 minutes.
Rhubarb Jell-O Bars
3 1/2 cups chopped rhubarb
1 1/2 cups sugar
2 Tbsp. cornstarch
1/4 cup water
1 tsp. vanilla
2 Tbsp. strawberry, raspberry or cherry Jell-O, dry
1 1/2 cup oatmeal
1 cup brown sugar
1 1/2 cup flour
1 tsp. baking soda
1 cup margarine, softened
In saucepan, combine rhubarb, sugar, cornstarch and water. Cook until thick. Remove
from heat and add vanilla and dry Jell-O. Stir until Jell-O is dissolved. Set aside to cool.
Mix oatmeal, brown sugar, flour, baking soda and margarine until crumbly. Press 3/4 of
crumbly mixture in a 9x13-inch pan. Spread rhubarb mixture evenly over crust. Then
sprinkle rest of crumbly mixture over rhubarb. Press down slightly. Bake at 357 degrees
for 30 to 35 minutes.
