Rhubarb Cake Dessert
5 cups prepared rhubarb
1 cup sugar
1 (3 oz.) pkg. raspberry Jell-O
3 cups miniature marshmallows
1 pkg. white cake mix
2 eggs
Water
Cut rhubarb into 1/2 inch pieces and arrange in greased 9x13-inch pan. Sprinkle with
sugar and Jell-O. Top with marshmallows. Prepare cake mix as directed on package
with eggs and water. Spread batter evenly over the marshmallows. Bake at 350 degrees
for 50 to 55 minutes. Cool 5 minutes, then turn out upside down on a serving tray. Serve
warm with whipped cream.
Rhubarb Upside Down Cake
5 cups rhubarb in 9x13-inch dish.
Sprinkle 1 cup sugar over rhubarb, 1 (3 oz.) package strawberry Jell-O over sugar, and 3
cups small marshmallows over all.
Mix up white cake mix and pour over all. Bake at 350 degrees for 45 minutes.
Variations: sour cherries, blueberries or apples (use same amount), yellow cake mix, or
any flavor Jell-O.
