Pineapple Snow
1 pkg. lime or strawberry Jell-O
1 cup hot water
1 cup canned pineapple juice
1/8 tsp. salt
1 egg white
Dissolve Jell-O in hot water. Add pineapple juice and salt. Chill until slightly thickened.
Place in bowl of ice and water. Add egg white and whip with egg beater until fluffy and
thick. Pile lightly in sherbet glasses. Chill until firm. Makes 6 to 8 servings.
Rainbow Jell-O Dessert
1 (3 oz.) pkg. cherry Jell-O
1 (3 oz.) pkg. lemon Jell-O
1 (3 oz.) pkg. lime Jell-O
1 cup whipped cream, whipped topping or Dream Whip
6 graham crackers, crushed
Prepare Jell-O according to directions of box. Congeal each flavor separately. When
congealed, cut into irregular shapes. Whip cream or Dream Whip. Fold into congealed
cubes to coat surfaces of Jell-O. Line 1 1/2 quart flat pan with graham cracker crumbs.
Fill dish with Jell-O mixture. Refrigerate. Cut into squares to serve. Makes 12 servings.
