Burgers Cordon Bleu

Shape lean ground beef into large, flat rectangles. Seal a slice of Swiss cheese, sprinkled with dried basil and garlic salt between two layers of beef. Cook on grill or in stovetop frying pan. Serve topped with sour cream.

Korean Hamburgers

1 lb. lean ground beef
2 Tbsp. soy sauce
Dash pepper
1 small clove garlic, mashed
1 green onion, chopped
1 Tbsp. toasted sesame seeds
3 Tbsp. flour (approximately)
1 egg
1 Tbsp. water
1 to 2 Tbsp. oil
Dipping sauce (recipe follows)

Mix ground beef, soy sauce, pepper, garlic, green onion and sesame seeds together well (works best if you use your hands). This may be made ahead and refrigerated, covered. When ready to cook, shape meat into 12 to 16 small patties and dredge in the flour to coat lightly all over.

Beat egg with water and dip each patty in egg to coat, then set on a rack to drain briefly. Heat a heavy 10-inch skillet over medium heat. Add the oil, then the meat. Cook until browned, about 2 minutes on each side. Remove to a serving plate, cover and set in a 150 degree oven for up to 1 hour. Serve with dipping sauce.

Dipping Sauce

4 Tbsp. soy sauce
4 tsp. vinegar
2 tsp. honey or brown sugar
Dash liquid hot pepper seasoning
2 tsp. toasted sesame seeds
Finely chopped green onion to taste

Combine soy sauce with vinegar. Blend in honey or brown sugar and hot pepper seasoning. Stir in sesame seeds and green onion.

Double-Decker Burgers

1 lb. ground beef
1 egg
1 tsp. salt
Dash of pepper
1 Tbsp. minced onion
1/4 cup ketchup
Thin slices of onion
Bacon slices

Combine all ingredients except onion and bacon slices. Mix well and form into patties. Brown the slices of onion and place one slice between two meat patties and sandwich together. Wrap bacon around the patty sandwich and fasten with a toothpick. Grill over coals or broil 3 to 5 inches from heat for 6 to 7 minutes on each side.
